Coconut milk is a great alternative to cow’s milk. It’s loaded with vitamins and minerals and tastes great. It’s really easy to make your own, and is so much better for you than when it comes in a carton. When you make your own, you know what’s going into it. You know it won’t be filled with flavourings and preseratives, and you’ll be getting all of the natural nutritional benefits.

Coconut Milk from Desiccated Coconut
step 1:
Add equal amounts of desiccated coconut and water into a saucepan.
Simmer on a low heat for 2 – 4 minutes, stirring frequently.
DO NOT ALLOW TO BOIL.


step 2:
Pour the mixture into a muslin-lined sieve over a jug and allow it to drip through. You can stir the mixture gently with a spoon to speed up the process.
step 3:
When most of the liquid has gone through into the jug, gather the sides of the muslin together and squeeze tightly with both hands to extract the last of the milk.


step 4:
Pour into airtight container and store in fridge up to 5 days.
