This chocolate tray bake sugar-free cake is delicious. But don’t let the sugar free part put you off, because you can’t even tell. And once you make this, guaranteed it will become a regular bake, as it’s so chocolatey and scrummy. Whenever I make this, it never lasts long in our house.

It’s amazing served warm, but it’s just as delicious when eaten cold.

sugar alternatives

There are many different sugar alternatives. There’s granulated, coarse, brown sugar, and powdered alternatives. So it can be confusing at times, as to which one you require. And then there’s finding one that tastes like sugar. A good tip that I picked up somewhere along the way, is that you can mix xylitol with erythitol and add a little stevia extract to make a great sweetener, and it tastes like sugar. You can mix 2 cups xylitol to 1 1/2 cups erythitol and 2 teaspoons of stevia extract. Keep it in a jar, and it will last, and save you money in the long run.

Method

Cake

  1. Mix the flour and sugar in a bowl
  2. Using a saucepan, add butter, water and cocoa and mix over a medium heat
  3. Bring mixture to the boil, and then pour into the flour and sugar mixture
  4. Mix well
  5. Add eggs, buttermilk, bicarbonate of soda and vanilla, and mix well
  6. Pour into greased 9 x 13 pan
  7. Bake at 180C for 30 minutes

Check using a skewer. If it comes out clean it’s done.

Chocolate fudge icing

  1. In a medium saucepan, add butter, milk, and cocoa and mix whilst bringing it to the boil.
  2. Remove from heat and add powdered sugar, stirring well with a whisk or wooden spoon, until sugar melts and mixture is smooth
  3. Stir in vanilla and hazelnuts
  4. Pour over hot cake
