Apple crumble cake
This is my apple crumble cake that’s sugar-free. I have a cooking apple tree in my garden, so every September I’m baking different recipes, making the most out of my apple harvest. This is one of my all-time favourites. A couple of years ago, I decided to give it a go with sugar alternatives, to cut out the sugar and lower the carbohydrate content. And it didn’t disappoint.

- Serves 8 – 10
- Approx. 21g carbs per slice (based on 10 slices)
Step 1. Pre heat oven to 170C, gas mark 3, then grease a 20cm cake tin with butter and lightly dust with flour.
Step 2. First make the crumble topping by adding the flour, cinnamon and butter into a bowl. Using your fingertips, rub the ingredients together until they resemble breadcrumbs. Stir in the sugar and set aside while you make the sponge batter.
Step 3. Cream together the butter and sugar. Add the egg and vanilla essence and whisk thoroughly. Sift together the flour, baking powder and salt. Then add half this mixture to the creamed butter and sugar mix, as well as half of the milk. Mix well on a medium speed, then add the rest of the flour mix, and the rest of the milk. Whisk well, and then pour the batter into the cake tin.
Step 4. Peel and slice the apples. Arrange the slices of apple on top on the cake batter in the cake tin. Then add the crumble topping on top of the apple slices.
Step 5. Place in the oven and bake for 35 – 45 minutes. Until it’s golden brown on top, and a skewer inserted into the middle of the cake comes out clean. Leave to cool, then remove it from the tin.
Enjoy it warm or cold!
